  • 400 g coconut milk
  • 60 g raw sugar
  • 1 lime, grated zest, no white pith, and juice (to taste)
  • 1 avocado, flesh only


  1. Place a bowl onto mixing bowl lid and weigh coconut milk into it. Transfer into ice cube trays and place into freezer overnight or until frozen.
  2. Add sugar and mill 20 sec/speed 10, or to a fine consistency.
  3. Add frozen coconut cubes, 1-2 teaspoon lime juice (to taste) and half of the grated lime zest and blend 1 min/speed 1-5, increasing speed gradually from speed 1 to speed 5 or until smooth and creamy. Scrape down sides of mixing bowl with spatula.
  4. Add avocado and blend 1 min/speed 1-6, increasing speed gradually from speed 1 to speed 6.
  5. Scrape down sides of mixing bowl with spatula and blend 1 min/speed 6 or until smooth and creamy.
  6. Sprinkle with remaining lime zest and serve immediately (see Tips).
